Ingredients

  • 150 grams Old-fashioned oats
  • 2 medium Ripe bananas
  • 120 grams Whole grain flour
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 120 milliliters Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 2 tablespoons Cooking spray or oil

Directions

Step 1

Preheat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray or oil.

Step 2

In a bowl, mash the ripe bananas thoroughly until smooth and slightly liquidy.

Step 3

Add the egg, almond milk, and vanilla extract to the mashed bananas. Mix well until combined.

Step 4

In a separate large bowl, combine the oats, whole grain flour, baking powder, ground cinnamon, and salt. Stir to mix.

Step 5

Pour the wet banana mixture into the dry ingredients, stirring gently until everything is just combined and a batter is formed.

Step 6

Using a spoon, drop dollops of the batter onto the preheated skillet. Each scone should be about 2 tablespoons of batter.

Step 7

Cook the scones for about 2–3 minutes on each side, or until they are golden brown and cooked through.

Step 8

Remove from the skillet and allow to cool slightly before serving.

Step 9

Serve the oat drop scones warm, perhaps with a spread of a sugar-free jam or a dollop of Greek yogurt.
