Ingredients

  • 250 grams Wholemeal flour
  • 150 grams Unsalted butter
  • 60 milliliters Ice cold water
  • 2 tablespoons Stevia
  • 50 grams Ground almonds
  • 50 grams Hazelnuts
  • 50 grams Walnuts
  • 1 large Egg
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large bowl, combine wholemeal flour and a pinch of salt.

Step 3

Add the unsalted butter. Using your fingers, rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 4

Add cold water, a little at a time, mixing until the dough comes together. Form it into a ball, flatten slightly, wrap in cling film, and refrigerate for 15 minutes.

In the meantime, roughly chop the hazelnuts and walnuts. Mix them with ground almonds in a separate bowl.

In a small bowl, beat the egg and stir in stevia, cinnamon, and vanilla extract.

Pour the egg mixture over the nuts and mix well until combined.

Remove the pastry from the fridge and roll it out on a lightly floured surface to about 0.5cm thick.

Line a 23cm tart tin with the pastry, trimming any excess at the edges.

Pour the nut mixture into the pastry case, spreading it evenly.

Bake in the preheated oven for 20 minutes or until the pastry is golden brown and the filling is set.
