Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Raw almonds, chopped
  • 1 cup Raw walnuts, chopped
  • 1 cup Raw pecans, chopped
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Pumpkin seeds (pepitas)
  • 0.5 cup Sunflower seeds
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the oats, chopped almonds, walnuts, pecans, shredded coconut, pumpkin seeds, sunflower seeds, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.

Step 3

In a small bowl, whisk together the melted coconut oil and vanilla extract.

Step 4

Pour the coconut oil mixture over the dry ingredients and stir until the oats and nuts are well coated.

Step 5

Spread the granola mixture evenly on the prepared baking sheet.

Step 6

Bake in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even baking. Watch closely in the last few minutes to prevent burning.
