Ingredients

  • 12 pieces Medjool dates (pitted)
  • 0.5 cup Raw almonds
  • 0.5 cup Raw walnuts
  • 0.25 cup Unsweetened cocoa powder
  • 1 teaspoon Pure vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Chia seeds
  • 1 tablespoon Coconut oil (melted)

Directions

Step 1

Start by soaking the Medjool dates in warm water for about 10 minutes to soften them. Drain well and pat dry with a paper towel.

Step 2

In a food processor, add the almonds and walnuts. Pulse until they are finely chopped.

Step 3

Add the softened dates, unsweetened cocoa powder, pure vanilla extract, and salt to the food processor. Blend until the mixture starts to stick together and becomes a dough-like consistency.

Step 4

Add the chia seeds and melted coconut oil to the mixture. Pulse a few more times to evenly distribute these ingredients throughout the dough.

Step 5

Line a baking sheet with parchment paper to prevent the energy balls from sticking.
