Ingredients

  • 2 cups Hazelnuts
  • 0.5 cup Cocoa powder, unsweetened
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Erythritol or preferred sugar substitute
  • 1.5 cups Almond flour
  • 0.5 cup Unsweetened almond milk
  • 1 cup Dark chocolate, sugar-free

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

Step 2

Spread the hazelnuts on a baking sheet and roast in the preheated oven for 10 minutes. Remove and allow to cool slightly.

Step 3

Transfer the hazelnuts to a clean kitchen towel and rub them to remove most of the skins.

Step 4

Place the peeled hazelnuts into a food processor. Blend until they become a smooth peanut butter-like paste, scraping down the sides as needed.

Step 5

Add the erythritol to the food processor and blend until well incorporated.

Step 6

Melt the coconut oil over low heat. Add the almond flour, cocoa powder, vanilla extract, salt, and melted coconut oil to the hazelnut paste. Blend until everything is well combined and smooth.

Gradually add the unsweetened almond milk while blending until the mixture is thick and creamy.

Pour the mixture into the prepared baking dish. Use a spatula to spread it evenly across the dish.

Melt the sugar-free dark chocolate over a double boiler or in the microwave, stirring until smooth.

Pour the melted chocolate over the hazelnut mixture in the baking dish. Spread evenly to cover the top.

Chill the bars in the refrigerator for at least 2 hours until firm.

Step 12

Once set, lift the bars out of the dish using the parchment paper. Cut into 12 equal bars and serve.
