Ingredients

  • 12 pieces pitted Medjool dates
  • 0.5 cup natural peanut butter
  • 1 cup rolled oats
  • 0.25 cup ground flaxseed
  • 0.25 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 2 tablespoons water

Directions

Step 1

Place the pitted Medjool dates in a food processor and blend until they form a sticky paste. If the dates are dry, soak them in warm water for 10 minutes and then drain before processing.

Step 2

Add the natural peanut butter, rolled oats, ground flaxseed, unsweetened shredded coconut, vanilla extract, sea salt, and water to the food processor.

Step 3

Pulse the mixture until all ingredients are well combined and form a thick dough. You may need to scrape down the sides of the food processor and blend again to ensure everything is mixed.

Step 4

Using a small scoop or your hands, roll the mixture into balls about 1 inch in diameter. Wet hands slightly to prevent sticking if necessary.

Step 5

Place the energy balls on a baking sheet lined with parchment paper.

Step 6

Refrigerate for at least 30 minutes to allow them to set.

Step 7

Transfer the set energy balls to an airtight container for storage. They can be stored in the refrigerator for up to 2 weeks or frozen for longer storage.
