Ingredients

  • 500 grams Black-eyed peas
  • 1 medium Onion
  • 1 medium Scotch bonnet pepper
  • 1 teaspoon Salt
  • 500 ml Vegetable oil
  • 50 ml Water

Directions

Step 1

Begin by soaking the black-eyed peas in warm water for about 30 minutes to an hour to make them easier to peel.

Step 2

Drain the soaked peas and rub between your hands to remove the skins. Rinse under water to allow the skins to float and be poured off. Repeat this process until most of the skins are removed.

Step 3

Transfer the peeled peas to a blender. Add the chopped onion, Scotch bonnet pepper, and 50 ml of water. Blend the mixture until it is smooth and thick. You may need to scrape down the sides of the blender occasionally or add a bit more water if necessary.

Step 4

Pour the blended mixture into a bowl and whisk it vigorously. This incorporates air into the batter, yielding a fluffier akara. Add the salt and mix thoroughly.

Step 5

Heat vegetable oil in a deep frying pan or pot over medium heat.

Step 6

Once the oil is hot, use a tablespoon to drop the batter into the oil. Do not overcrowd the pan.

Step 7

Fry the akara balls for about 3-4 minutes on each side or until they are golden brown and cooked through.

Step 8

Remove the fried akara with a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.

Step 9

Serve your sugar-free Nigerian Akara hot as a snack or with pap for a delicious breakfast.
