Ingredients

  • 0.5 cup Yellow moong dal
  • 0.5 cup Rice
  • 2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoon Asafoetida (hing)
  • 0.5 teaspoon Turmeric powder
  • 1 inch piece, grated Ginger
  • 2 small, chopped Green chilies
  • 1 teaspoon Salt
  • 3 cups Water
  • 2 tablespoons, chopped Fresh coriander leaves

Directions

Step 1

Rinse the yellow moong dal and rice together in plenty of water until the water runs clear. Drain well.

Step 2

In a pressure cooker, heat the ghee over medium heat.

Step 3

Add the cumin seeds to the hot ghee and let them splutter for a few seconds.

Step 4

Add the asafoetida and turmeric powder, stirring quickly to mix.

Step 5

Add the grated ginger and chopped green chilies, sautéing for 1-2 minutes until aromatic.

Step 6

Add the rinsed rice and moong dal to the cooker, stirring gently to coat with the spices.

Step 7

Pour in 3 cups of water and add the salt. Stir to combine all the ingredients.

Step 8

Close the lid of the pressure cooker and cook for 3-4 whistles on medium flame. Turn off the heat and let the pressure release naturally.

Once the pressure has released, open the cooker and fluff the khichdi gently with a fork.
