Ingredients

  • 500 grams Black-eyed peas (dried)
  • 2 large Red bell peppers
  • 2 medium Tomatoes
  • 1 large Onions
  • 1 small Scotch bonnet peppers
  • 120 ml Vegetable oil
  • 1 teaspoon Paprika
  • 1 tablespoon Salt
  • 600 ml Water
  • 2 hard-boiled Eggs (optional)
  • 5 pieces Banana leaves or foil

Directions

Step 1

Rinse the dried black-eyed peas in water to remove any dirt or debris.

Step 2

Soak the beans in warm water for about 30 minutes to 1 hour. This will help loosen the skins.

Step 3

Rub the soaked beans between your palms to peel off the skins. Repeat this process several times, changing the water as needed, until most of the skins have been removed.

Step 4

Once the beans are peeled, rinse them thoroughly and drain them.

Step 5

In a blender, combine peeled beans, chopped red bell peppers, tomatoes, onion, and scotch bonnet pepper. Add 300 ml of water and blend until smooth.

Pour the blended mixture into a large mixing bowl. Add the vegetable oil, paprika, and salt. Stir well until all ingredients are well combined.

Gradually add the remaining 300 ml of water, stirring consistently until you achieve a slightly thick, yet pourable consistency.

Cut banana leaves into squares or prepare pieces of foil to use as wraps. If using banana leaves, briefly place them over an open flame to make them pliable.

If using eggs, cut each hard-boiled egg into quarters.

Portion the mixture evenly into the prepared wraps, adding a piece of egg to each portion for added flavor, if desired.

Fold the banana leaves or seal the foil securely to prevent leakage during steaming.

Place the wrapped Moi Moi into a large pot with a steamer basket or elevated rack. Pour water into the pot, just below the steamer basket or rack, ensuring it doesn't touch the wraps.

Cover the pot and steam for about 45 to 60 minutes. Check occasionally to ensure there's enough water at the bottom of the pot, adding more as necessary.

Step 14

To test if the Moi Moi is cooked, insert a toothpick into the center. If it comes out clean, it's ready.

Step 15

Allow the Moi Moi to cool slightly before carefully unwrapping. Serve warm as a side dish or a standalone meal.
