Ingredients

  • 200 grams Glutinous rice flour
  • 50 grams Almond flour
  • 40 grams Stevia or monk fruit sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 180 milliliters Unsweetened coconut milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 60 milliliters Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with coconut oil.

Step 2

In a large mixing bowl, combine the glutinous rice flour, almond flour, stevia or monk fruit sweetener, baking powder, and salt. Mix well to ensure there are no lumps.

Step 3

In another bowl, whisk together the unsweetened coconut milk, egg, vanilla extract, and melted coconut oil until the mixture is smooth and well combined.

Gradually add the wet ingredients to the dry ingredients, stirring continuously until you form a smooth, thick batter.
