Ingredients

  • 240 ml Water
  • 60 g Unsalted butter
  • 0.5 tsp Salt
  • 0.5 tsp Ground cinnamon
  • 120 g All-purpose flour
  • 2 Large eggs
  • 2 tbsp Sugar substitute (such as erythritol or stevia blend)
  • 1 tsp Ground cinnamon, for coating
  • 500 ml Vegetable oil, for frying

Directions

Step 1

In a medium saucepan, combine the water, unsalted butter, salt, and 0.5 teaspoon of ground cinnamon. Bring the mixture to a boil over medium heat.

Step 2

Once the mixture reaches a boil, reduce the heat to low and add the all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a cohesive dough and pulls away from the sides of the pan (about 1-2 minutes).

Step 3

Remove the saucepan from heat and allow the mixture to cool slightly for about 2 minutes.

Add the eggs, one at a time, to the dough, stirring after each addition until fully incorporated and smooth.

Heat the vegetable oil in a deep-frying pan or pot to 180°C (350°F).

Transfer the churro dough to a piping bag fitted with a large star tip nozzle.
