Ingredients

  • 150 grams Almond flour
  • 100 grams Unsalted butter
  • 0.5 teaspoon Salt
  • 50 grams Erythritol granules
  • 300 ml Sugar-free sweetened condensed milk
  • 75 grams Unsalted butter (for caramel)
  • 1 teaspoon Pure vanilla extract
  • 200 grams Unsweetened dark chocolate chips
  • 2 tablespoons Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal.

Step 2

In a mixing bowl, combine almond flour, 100 g of unsalted butter, salt, and erythritol until a dough forms.

Step 3

Press the dough evenly into the prepared baking dish, forming a flat layer. Bake for 12-15 minutes or until lightly golden. Remove from oven and let it cool completely.

Step 4

Meanwhile, in a saucepan over low heat, combine sugar-free sweetened condensed milk, 75 g of unsalted butter, and vanilla extract. Stir continuously for about 10-15 minutes until thickened and slightly caramelized. Be careful not to burn it.

Step 5

Once the shortbread is cooled, pour the caramel mixture evenly over the top. Spread it using a spatula to cover the entire surface. Refrigerate until set, about 1 hour.

Step 6

In a microwave-safe bowl or over a double boiler, melt the unsweetened dark chocolate chips with the coconut oil, stirring until smooth.

Step 7

Pour the melted chocolate over the caramel layer, spreading evenly to cover. Refrigerate until the chocolate is firm, at least 1 hour.

Step 8

Carefully lift the layered treat out of the dish using the parchment overhang. Cut into 16 squares using a sharp knife, cleaning the knife between cuts to maintain clean edges.

Step 9

Store in an airtight container in the fridge for up to a week. Enjoy your decadent sugar-free millionaire shortbread!
