Ingredients

  • 400 g Almond flour
  • 150 g Butter
  • 150 g Honey
  • 3 large Eggs
  • 1 tsp Baking soda
  • 1 tbsp White vinegar
  • 100 g Erythritol
  • 500 ml Unsweetened whipping cream
  • 2 tsp Vanilla extract
  • 150 g Chopped walnuts

Directions

Step 1

Preheat the oven to 170°C (340°F) and line a baking tray with parchment paper.

Step 2

In a medium saucepan over low heat, melt the butter and honey together. Once melted, let the mixture cool to room temperature.

Step 3

In a large mixing bowl, beat the eggs with an electric mixer until they become frothy. Gradually incorporate the melted butter and honey mixture.

Step 4

In a small bowl, combine the baking soda with white vinegar and stir until it fizzes. Add this mixture to the egg and honey mixture and stir well.

Gradually fold in the almond flour, ensuring the mixture is smooth and there are no lumps.

Divide the batter into 5 equal parts. Spread each part thinly on separate sheets of parchment paper or baking trays to form a thin layer, about 1/4 inch thick.
