Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, cold and diced
  • 3 large Eggs
  • 0.25 cup Water
  • 1 Egg yolk, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

Add the cold, diced butter to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the eggs and water.

Step 5

Pour the wet ingredients into the flour and butter mixture. Stir until a dough forms. It will be sticky initially, but will become more workable as you continue.

Step 6

Place the dough on a sheet of parchment paper. Cover with another parchment sheet and roll out the dough into a rectangle roughly 1/4 inch thick.

Step 7

Using a sharp knife or pizza cutter, cut the rectangle into 8 triangles.

Step 8

Carefully roll each triangle from the wide end to the tip, forming a crescent shape. Place each rolled croissant onto the prepared baking sheet.

Step 9

Brush the croissants lightly with the beaten egg yolk to give them a golden, glossy finish.

Step 10

Bake in the preheated oven for 15-18 minutes, or until golden brown and set.

Step 11

Allow the croissants to cool on a wire rack before serving. Enjoy them warm or at room temperature!
