Ingredients

  • 2 cups whole wheat flour
  • 4 tablespoons ghee
  • 0.5 teaspoon carom seeds
  • 1 teaspoon salt
  • 0.75 cup water
  • 1 cup sattu (roasted gram flour)
  • 2 tablespoons mustard oil
  • 0.5 teaspoon nigella seeds
  • 1 finely chopped green chili
  • 1 inch, grated ginger
  • 1 tablespoon lemon juice
  • 1 medium brinjal (eggplant)
  • 2 medium tomato
  • 1 medium, boiled and mashed potato
  • 4 crushed garlic cloves
  • 2 tablespoons, chopped coriander leaves
  • 0.5 teaspoon red chili powder

Directions

Step 1

Prepare the litti dough by mixing whole wheat flour with 1 teaspoon salt, carom seeds, and 2 tablespoons of ghee. Gradually add water and knead to form a soft, pliable dough. Set aside covered for 15-20 minutes.

Step 2

For the stuffing, mix sattu, 2 tablespoons of mustard oil, nigella seeds, chopped green chili, grated ginger, a pinch of salt, and lemon juice. Mix well to form a crumbly mixture.

Step 3

Divide the dough into equal parts and roll each into a small ball. Flatten the balls, place a spoonful of stuffing in the center, and bring the edges together to seal. Roll gently to form smooth balls.

Step 4

Preheat your oven to 375°F (190°C). Place the littis on a baking tray and bake for 25-30 minutes, turning halfway, until golden brown.

Step 5

While the litti bakes, prepare the choka by roasting the brinjal and tomatoes over an open flame until charred and tender.

Peel the charred skin from the roasted brinjal and tomatoes. Mash them in a bowl along with the boiled potato, crushed garlic, chopped coriander leaves, and red chili powder.

Adjust seasoning with salt as needed, and mix well to form the choka.

Serve the baked littis hot with the freshly prepared chokha.
