Ingredients

  • 100 ml Lemon juice
  • 1 tablespoon Lemon zest
  • 240 grams Greek yogurt
  • 240 ml Heavy cream
  • 2 Egg whites
  • 60 grams Powdered Erythritol
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Water
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a small bowl, combine gelatin powder with 2 tablespoons of water. Stir to dissolve and set aside for about 5 minutes to bloom.

Step 2

In a saucepan over low heat, add the lemon juice, lemon zest, and gelatin mixture. Stir gently until the gelatin is completely dissolved. Remove from heat and let it cool for a few minutes.

Step 3

In a large mixing bowl, beat the heavy cream until soft peaks form. Gently fold in the Greek yogurt and vanilla extract.
