Ingredients

  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh basil leaves
  • 2 tablespoons Fresh parsley leaves
  • 1 tablespoon Chives
  • 1 cup Chicken or vegetable stock
  • 1 teaspoon Gelatin powder
  • 3 tablespoons Plain Greek yogurt
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. In a small bowl, combine the gelatin powder with 2 tablespoons of cold water to bloom. Allow it to sit for about 5 minutes.

2. Meanwhile, in a blender or food processor, combine the fresh basil leaves, parsley leaves, chives, lemon juice, lemon zest, and olive oil. Blend until the herbs are finely chopped and well combined.

3. In a small saucepan, heat the chicken or vegetable stock over medium heat until it just begins to simmer. Add the bloomed gelatin to the warm stock and stir until completely dissolved.
