Ingredients

  • 250 grams All-purpose flour
  • 50 grams Coconut flour
  • 150 grams Unsalted butter, chilled
  • 80 milliliters Cold water
  • 0.5 teaspoons Salt
  • 200 grams Sugar-free kaya
  • 1 Egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 180°C (356°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour and coconut flour. Add the salt and mix well.

Step 3

Cut the chilled unsalted butter into small cubes and add it to the flour mixture.

Step 4

Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 5

Gradually add the cold water, mixing with your hands until a dough begins to form. Be careful not to overwork the dough.

Step 6

On a lightly floured surface, knead the dough briefly until it comes together smoothly. Wrap in cling film and chill in the fridge for about 15 minutes.

Step 7

Roll out the chilled dough into a thin sheet (about 3mm thick). Using a round cutter, cut circles approximately 8cm in diameter.

Step 8

Place about a teaspoon of sugar-free kaya in the center of each dough circle. Be careful not to overfill.

Step 9

Fold the dough over the kaya to form a semi-circle and press the edges to seal. You can use a fork to crimp the edges for an attractive finish.

Step 10

Place the kaya puffs on the prepared baking tray, ensuring they are evenly spaced.

Step 11

Brush the tops of the puffs with the beaten egg to create a golden finish.

Step 12

Bake in the preheated oven for 20-25 minutes or until golden brown.

Step 13

Once baked, remove from the oven and allow to cool slightly on a wire rack before serving.
