Directions

Step 1

Place the cashew nuts in a blender or food processor and pulse until they are finely powdered. Be careful not to over-process as this will release the oils and make it sticky.

In a non-stick pan, combine the stevia and water. Stir until the stevia dissolves and bring to a gentle boil.

Add the cashew powder to the pan with the stevia syrup. Stir constantly over low heat to avoid lumps and ensure a smooth mixture.
