Ingredients

  • 100 grams Whole wheat flour
  • 2 tablespoons Stevia or other sugar substitute
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 150 milliliters Milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Lemon zest
  • 50 grams Raisins (optional)
  • 100 grams Fresh berries for serving
  • 1 tablespoon Powdered sugar substitute (optional, for dusting)

Directions

Step 1

In a bowl, whisk together the whole wheat flour, stevia, baking powder, and salt.

Step 2

Separate the eggs, placing the yolks in one large bowl and the whites in another.

Step 3

To the bowl with yolks, add the milk and vanilla extract, whisking until smooth. Gradually incorporate the dry ingredients into the mixture until a smooth batter forms.

Step 4

In a separate bowl, beat the egg whites until soft peaks form. Gently fold the beaten whites into the batter, taking care not to deflate them.

Step 5

Mix in the lemon zest and optional raisins if using.

Step 6

Heat a large non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, pour in the batter, spreading it evenly across the skillet.

Step 7

Cook without stirring until the base is golden and the top appears set, about 5-7 minutes.

Step 8

Using two forks, gently tear the pancake into bite-sized pieces, add the remaining tablespoon of butter, and continue cooking. Stir occasionally until all pieces are golden brown and cooked through, about 5 minutes more.

Step 9

Serve the Kaiserschmarren warm, topped with fresh berries and a dusting of powdered sugar substitute if desired.
