Ingredients

  • 500 grams Bottle gourd (kaddu)
  • 1 liters Full-fat milk
  • 4 pieces Cardamom pods
  • 10 grams Almonds
  • 10 grams Cashews
  • 10 grams Pistachios
  • 1 pinch Saffron strands
  • 2 tablespoons Stevia or erythritol
  • 2 tablespoons Ghee

Directions

Step 1

Peel the bottle gourd and grate it using a medium-sized grater. Set aside.

Step 2

Heat 1 tablespoon of ghee in a heavy-bottomed pan on medium heat.

Step 3

Add the grated bottle gourd to the pan and sauté for 5-7 minutes until the raw smell disappears and it becomes slightly tender.

Step 4

In a separate pot, bring the milk to a boil. Once it boils, lower the heat to a simmer.

Step 5

Add the sautéed bottle gourd to the simmering milk. Cook on a low flame for about 20-25 minutes, stirring occasionally to prevent sticking.

Step 6

While the kheer is cooking, peel and finely slice the almonds, cashews, and pistachios.

Step 7

Crush the cardamom pods to a fine powder and set aside.

Step 8

In a small pan, heat the remaining tablespoon of ghee and lightly roast the sliced nuts. Set aside for garnishing.

Step 9

Once the bottle gourd is fully cooked and the milk has thickened, add the saffron strands and crushed cardamom to the mixture. Stir to combine.

Step 10

Add stevia or erythritol and mix well. Continue to cook for another 5 minutes. Taste and adjust sweetness as desired.

Transfer the kheer to a serving bowl and garnish with roasted nuts.

Step 12

Allow the kheer to cool at room temperature before refrigerating for at least an hour. Serve chilled.
