Ingredients

  • 400 g Whole wheat flour
  • 8 g Instant yeast
  • 1 tsp Salt
  • 250 ml Warm milk
  • 50 g Unsalted butter
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 300 g Fresh blueberries
  • 3 tbsp Erythritol or another sugar substitute
  • 1 tbsp Cornstarch
  • 1 large Egg yolk
  • 1 tbsp Water

Directions

Step 1

In a large bowl, combine the whole wheat flour, instant yeast, and salt.

Step 2

Warm the milk in a small saucepan until lukewarm and melt the unsalted butter in it. Remove from heat.

Step 3

Add the warm milk and melted butter to the dry ingredients and mix until incorporated.

Step 4

Beat the egg and mix it into the dough along with the vanilla extract. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Step 5

Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place until doubled in size, about 1 hour.

While the dough is rising, prepare the filling by combining fresh blueberries, erythritol, and cornstarch in a medium saucepan over medium heat. Stir regularly until the blueberries release their juices and the mixture thickens. Set aside to cool.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
