Ingredients

  • 1.5 cups Almond flour
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Butter, unsalted and melted
  • 1 teaspoons Vanilla extract
  • 1 Egg
  • 0.5 cups Sugar-free sweetener (erythritol or monk fruit)
  • 0.5 cups Sugar-free chocolate chips
  • 1 quart Sugar-free vanilla ice cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, mix together the almond flour, baking soda, and salt.

Step 3

In a separate large bowl, whisk together the melted butter, vanilla extract, and egg until well combined.

Step 4

Add the sugar-free sweetener to the wet ingredients and stir until the sweetener is fully dissolved.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring constantly to form a dough.

Step 6

Fold in the sugar-free chocolate chips until evenly distributed in the dough.

Step 7

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges begin to brown.

Step 9

Remove from oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once the cookies are cooled, take one cookie and place a scoop of sugar-free vanilla ice cream on the flat side.

Step 11

Top with another cookie, flat side down, to form a sandwich. Gently press down to spread the ice cream evenly.

Step 12

Repeat the process with the remaining cookies and ice cream.

Step 13

Wrap each sandwich in plastic wrap and place them in the freezer for at least an hour to firm up.

Step 14

Serve straight from the freezer and enjoy your sugar-free ice cream cookie sandwiches!
