Ingredients

  • 0.5 cup Yellow mustard seeds
  • 0.75 cup Apple cider vinegar
  • 0.5 cup Water
  • 0.25 cup Fresh horseradish root
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Black pepper

Directions

Step 1

Place the yellow mustard seeds in a medium-sized bowl.

Step 2

Pour the apple cider vinegar and water over the mustard seeds, stirring to combine.

Step 3

Cover the bowl with plastic wrap or a lid and let it sit at room temperature for 12-24 hours, allowing the seeds to absorb the liquids and soften.

Step 4

Once the seeds have softened, transfer the mixture to a blender or food processor.

Step 5

Peel and finely grate the fresh horseradish root, measuring 1/4 cup, and add it to the blender.

Step 6

Add the salt, turmeric powder, garlic powder, onion powder, and black pepper to the blender.

Step 7

Blend the mixture on high until you achieve your desired mustard consistency, stopping to scrape down the sides as needed. For a smoother mustard, blend longer.

Step 8

Taste and adjust seasoning if needed. Add a splash more water if the mustard is too thick for your liking.

Step 9

Transfer the sugar-free horseradish mustard to a clean, airtight jar or container and refrigerate. For best flavor, allow the mustard to rest in the fridge for at least 24 hours before using.

Step 10

Store the mustard in the refrigerator for up to 3 months.
