Ingredients

  • 2 medium Sweet potatoes
  • 1 large Zucchini
  • 2 medium Beets

Directions

Step 1

Preheat the oven to 375°F (190°C). Line two large baking sheets with parchment paper.

Peel the sweet potatoes, beets, and carrots. Trim the ends of the zucchini.

Using a mandoline slicer, thinly slice the sweet potatoes, zucchini, beets, and carrots to about 1/8-inch thickness. If you don't have a mandoline, use a sharp knife to slice as thinly as possible.
