Ingredients

  • 2 pounds Fresh turkey breast
  • 2 teaspoons Liquid smoke
  • 3 tablespoons Worcestershire sauce
  • 4 tablespoons Soy sauce (low sodium)
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper (optional)
  • 1 teaspoon Salt

Directions

Step 1

Begin by partially freezing the turkey breast for about 1-2 hours to make it easier to slice. You want it firm but not completely frozen.

Step 2

Once partially frozen, slice the turkey breast against the grain into thin strips, about 1/8 to 1/4 inch thick.

Step 3

In a large bowl, combine the liquid smoke, Worcestershire sauce, soy sauce, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and salt. Mix well to create the marinade.

Step 4

Add the sliced turkey strips to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4-6 hours, preferably overnight, allowing the turkey to absorb the flavors.

Step 5

Once marinated, preheat your oven to 175°F (80°C).

Step 6

Line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet.

Step 7

Lay the marinated turkey strips in a single layer on the wire rack, ensuring they do not touch each other to allow even drying.

Step 8

Place the baking sheet in the preheated oven and let the turkey jerky dry for about 4-5 hours. Check them occasionally for doneness; the jerky should be dry and firm, but still slightly pliable and not crumbly.

Step 9

Once dried to your liking, remove from the oven and allow to cool completely on the rack.

Step 10

Store the cooled turkey jerky in an airtight container or zip-top bag in the refrigerator. For longer storage, freeze the jerky.
