Ingredients

  • 1000 grams ripe tomatoes
  • 1 large onion
  • 30 grams fresh ginger
  • 3 cloves garlic cloves
  • 120 ml apple cider vinegar
  • 100 grams raisins
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Start by washing the tomatoes thoroughly under running water. Remove the cores and roughly chop the tomatoes. Set them aside.

Step 2

Peel the onion and finely chop it. Peel the ginger and garlic, and mince them finely.

Step 3

In a large saucepan, heat the olive oil over medium heat. Add the mustard seeds and cumin seeds, allowing them to sizzle and pop for about 30 seconds.

Step 4

Add the chopped onions to the pan and sauté until they are soft and translucent, about 5-7 minutes.

Stir in the minced ginger and garlic, cooking for another 2 minutes until fragrant.

Add the chopped tomatoes to the saucepan, followed by the raisins, apple cider vinegar, ground coriander, red chili flakes, salt, and black pepper.
