Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups Almond flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cups Unsweetened almond milk
  • 0.25 cups Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 0.75 cups Powdered erythritol
  • 0.25 cup Unsalted butter
  • 1 tablespoon Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, almond flour, baking powder, ground cinnamon, and salt. Stir well to mix the dry ingredients thoroughly.

Step 3

In a separate bowl, whisk together the unsweetened almond milk, unsweetened applesauce, vanilla extract, and eggs until well combined.

Step 4

Combine the wet ingredients with the dry ingredients, mixing until just combined and no dry flour remains visible.

Step 5

Gently melt the unsalted butter and coconut oil in a small saucepan over low heat or in the microwave, then mix them into the batter until fully combined.

Step 6

Fold in the powdered erythritol carefully, ensuring it is evenly distributed throughout the mixture.

Step 7

Using a small cookie scoop or your hands, roll the batter into 1-inch balls and place them onto the prepared baking sheet, leaving a small gap between each ball.

Step 8

Bake in the preheated oven for 10 minutes, or until the Tim Bits are lightly golden and firm to the touch.

Step 9

Allow to cool briefly on the baking sheet before transferring to a wire rack to cool completely.

Step 10

Optionally, roll the cooled Tim Bits in additional powdered erythritol or a cinnamon-erythritol mixture for an extra sugary appearance and taste before serving.
