Ingredients

  • 1 cup Almond flour
  • 0.25 cup Cocoa powder
  • 0.5 cup Erythritol or preferred sugar substitute
  • 0.25 teaspoon Baking powder
  • 0.125 teaspoon Salt
  • 0.25 cup Unsalted butter, softened
  • 1 large Egg
  • 1 teaspoon Peppermint extract
  • 1 teaspoon Vanilla extract
  • 1 cup Sugar-free dark chocolate chips
  • 1 tablespoon Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt until well combined.

Step 3

In a separate bowl, cream the softened butter until smooth. Add the egg, peppermint extract, and vanilla extract and mix until well incorporated.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
