Heat the milk in a saucepan over medium heat until it reaches 180°F (82°C), stirring occasionally to prevent scorching. This process helps in killing any unwanted bacteria and will allow the milk to set into yogurt.

Once the milk reaches 180°F, remove the saucepan from the heat and let it cool to about 110°F (43°C). You can speed up the cooling process by placing the pan in a bath of ice water while stirring.

Once the milk has cooled to 110°F, stir in the plain yogurt with live cultures and the vanilla extract. Mix well to ensure the cultures are evenly distributed.
