Ingredients

  • 150 grams Unsweetened shredded coconut
  • 30 grams Coconut flour
  • 100 grams Coconut cream
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Stevia powder
  • 20 pieces Whole almonds
  • 50 grams Extra unsweetened shredded coconut

Directions

Step 1

Begin by preparing the filling. In a medium mixing bowl, combine 150 grams of unsweetened shredded coconut, 30 grams of coconut flour, 100 grams of coconut cream, 1 teaspoon of vanilla extract, and 1 tablespoon of stevia powder. Mix thoroughly until well combined and a sticky dough is formed.

Step 2

Cover the mixture and place it in the fridge for about 10-15 minutes to firm up slightly. This will make it easier to mold into balls.

While the mixture is chilling, prepare a baking tray lined with parchment paper.
