Ingredients

  • 1.5 cups Warm water
  • 2.25 teaspoons Active dry yeast
  • 3 tablespoons Unsalted butter
  • 4 cups All-purpose flour
  • 1 teaspoon Salt
  • 0.33 cup Baking soda
  • 1 Egg yolk
  • 1 tablespoon Coarse sea salt

Directions

Step 1

In a large bowl, combine the warm water and active dry yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy.

Step 2

Melt the unsalted butter and add it to the yeast mixture. Stir in 1 teaspoon of salt.

Step 3

Gradually add the all-purpose flour, one cup at a time, mixing with a wooden spoon or spatula until a dough begins to form.

Step 4

Transfer the dough onto a lightly floured surface and knead it for about 5 minutes until it is smooth and elastic.

Step 5

Coat a large bowl with a light layer of oil and place the dough inside. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 1 hour or until the dough doubles in size.

Step 6

Preheat your oven to 450°F (232°C). Line two baking sheets with parchment paper.

Step 7

In a large pot, bring 9 cups of water and the baking soda to a boil.

Step 8

Once the dough has risen, punch it down and transfer it to a lightly floured surface. Cut the dough into 8 equally sized pieces.

Step 9

Roll each piece of dough into a long rope, about 18 inches long, and cut the rope into 1-inch pieces.

Step 10

Boil the pretzel bites in the baking soda water in batches, about 10 at a time, for 30 seconds each.

Step 11

Remove with a slotted spoon and place onto the prepared baking sheets.

Step 12

Beat the egg yolk with 1 tablespoon of water to make an egg wash. Brush this over each boiled pretzel bite.

Step 13

Sprinkle coarse sea salt on top of the bites.

Step 14

Bake in the preheated oven for 12-15 minutes, or until the pretzel bites are golden brown.

Step 15

Remove from the oven and let them cool slightly before serving.
