Ingredients

  • 250 grams Whole wheat flour
  • 250 grams All-purpose flour
  • 2.5 teaspoons Instant yeast
  • 250 milliliters Warm milk
  • 50 milliliters Warm water
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 20 grams Butter (for brushing)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Mix well to ensure the salt is evenly distributed.

Step 2

In a small bowl, combine warm milk and warm water. Ensure the temperature is lukewarm to activate the yeast effectively.

Step 3

Add the instant yeast to the milk-water mixture and stir well. Let it sit for about 5 minutes until it becomes frothy, indicating that the yeast is active.

Step 4

Make a well in the center of the dry ingredients and pour in the yeast mixture along with the olive oil.

Step 5

Mix everything until a rough dough forms. Turn the dough onto a lightly floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic.

Step 6

Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 7

Once the dough has risen, punch it down to release the air, and divide it into 12 equal portions.

Step 8

Shape each portion into a smooth ball by tucking the edges underneath and rolling it gently in a circular motion with your palm.

Step 9

Arrange the dough balls in a greased baking tray, leaving just a little space between each to allow room for rising.

Step 10

Cover the dough balls with a damp cloth and let them rise again for another 30-45 minutes until they double in size.

Step 11

Preheat the oven to 200°C (390°F).

Step 12

Bake the pav in the preheated oven for 15-20 minutes or until the tops are golden brown.

Step 13

Once baked, remove the pav from the oven and brush the tops with melted butter to give them a soft and shiny crust.

Step 14

Allow the pav to cool slightly before serving. Enjoy the homemade pav with your favorite curry or as a snack.
