Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup dried apricots
  • 1 cup dried cranberries
  • 0.5 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil
  • 0.25 cup water

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, raw almonds, raw walnuts, chia seeds, unsweetened shredded coconut, ground cinnamon, and salt. Stir until well mixed.

In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in the vanilla extract and water until combined.

Pour the coconut oil mixture over the dry ingredients in the large mixing bowl and stir well until everything is evenly coated.
