Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw almonds
  • 1 cup unsweetened coconut flakes
  • 0.5 cup raw pumpkin seeds (pepitas)
  • 0.5 cup raw sunflower seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil
  • 0.5 cup unsweetened applesauce
  • 0.5 cup raisins

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, coconut flakes, pumpkin seeds, sunflower seeds, ground cinnamon, and salt. Stir until well mixed.

Step 3

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the vanilla extract and unsweetened applesauce until well combined.

Step 4

Pour the wet mixture over the dry ingredients in the mixing bowl. Stir everything together until the oats and nuts are evenly coated.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet.

Step 6

Bake in the preheated oven for 15 minutes, then remove from the oven and stir the granola. This ensures even cooking.

Step 7

Return the granola to the oven and bake for an additional 15 minutes, or until golden brown and crisp.

Step 8

Remove from the oven and allow the granola to cool completely on the baking sheet. It will become crunchier as it cools.

Step 9

Once cooled, stir in the raisins, then transfer the granola to an airtight container for storage.
