Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw almonds, chopped
  • 1 cup raw pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 large banana, ripe and mashed
  • 0.5 cup unsweetened applesauce

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, pumpkin seeds, shredded coconut, chia seeds, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.

Step 3

In a separate small mixing bowl, whisk together the melted coconut oil, vanilla extract, mashed banana, and unsweetened applesauce until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or spatula until the mixture is evenly coated.

Step 5

Spread the granola mixture in an even layer on the prepared baking sheet.

Step 6

Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even baking, until the granola is golden brown and crunchy.

Step 7

Remove from oven and let the granola cool completely on the baking sheet. As it cools, it will become crispier.

Step 8

Once cooled, break any large clusters into smaller bits and transfer the granola to an airtight container for storage.

Step 9

Serve the granola with your favorite dairy-free milk, yogurt, or enjoy it as a dry snack.
