Ingredients

  • 4 medium Fresh apples
  • 2 cups Water
  • 1 Cinnamon stick
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Core and chop the apples into small pieces, leaving the skin on for added fiber and nutrients.

Step 2

In a medium saucepan, combine the chopped apples, 2 cups of water, and the cinnamon stick.

Step 3

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the apples are very soft.

Step 4

Remove the saucepan from the heat and let it cool slightly. Then, transfer the mixture to a blender or use an immersion blender to puree it until smooth.

Step 5

Strain the pureed apples through a fine-mesh sieve or cheesecloth back into the saucepan, pressing down to extract as much liquid as possible. Discard the solids.

Step 6

Return the liquid to heat and mix in the vanilla extract, lemon juice, and ground nutmeg.

Step 7

In a small bowl, whisk together the cornstarch and cold water until smooth.

Step 8

Slowly stir the cornstarch mixture into the apple syrup, cooking over medium heat until the syrup thickens, about 5-10 minutes.

Step 9

Adjust the consistency by adding a little more water if needed, and cook for an additional minute.

Step 10

Remove from heat, let it cool to room temperature, and transfer the syrup to a glass jar or bottle for storage.

Step 11

Store in the refrigerator for up to two weeks and shake well before use.
