Ingredients

  • 1.5 cups unsweetened shredded coconut
  • 0.25 cup coconut oil
  • 0.25 cup erythritol sweetener
  • 1 teaspoon pure vanilla extract
  • 24 pieces whole almonds
  • 1 cup sugar-free dark chocolate chips
  • 0.125 teaspoon salt

Directions

Step 1

Line a baking sheet with parchment paper and set aside.

In a medium mixing bowl, combine the unsweetened shredded coconut, melted coconut oil, erythritol sweetener, pure vanilla extract, and salt. Mix well until the ingredients are evenly combined and the mixture holds together when pressed.

Using your hands, form the coconut mixture into small rectangles, about 2 inches long and 1 inch wide. Place them on the prepared baking sheet.
