Ingredients

  • 1 cup dried red beans
  • 2 tablespoons olive oil
  • 1 medium onion, chopped

  • 2 large carrots, diced
  • 2 pieces celery stalks, diced
  • 1 large red bell pepper, diced
  • 14.5 ounces canned diced tomatoes
  • 6 cups vegetable broth
  • 2 pieces bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Rinse the dried red beans under cold water. Place them in a large bowl and cover with fresh water. Allow to soak for at least 8 hours or overnight.

Drain and rinse the soaked beans. Set aside.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
