Rinse the pork bones under cold water to remove any impurities.
In a large pot, combine the pork bones and 10 cups of water. Bring to a boil over high heat.
Once boiling, reduce the heat to medium and simmer for 5 minutes. Skim any foam that rises to the top.
Peel the carrots and cut them into large chunks. Peel and quarter the onion. Chop the celery into large pieces. Smash the garlic cloves with the back of a knife to remove the skins. Peel and slice the ginger root.
Add carrots, onion, celery, garlic, ginger, bay leaves, and peppercorns to the pot with the pork bones.
Simmer the broth on low heat for approximately 2.5 hours, partially covered, to develop the flavors.
After 2.5 hours, season the broth with salt to taste. Adjust seasoning as desired.
Slice the cabbage into thick strips and add to the pot, cooking for an additional 30 minutes.
Remove the pork bones, carrots, and other vegetables from the pot with a slotted spoon. Discard the bones and bay leaves.
Return some of the carrots to the soup for added texture and flavor. If desired, shred any available meat from the bones and add it back to the soup.
Finely chop the parsley and slice the green onions.
Serve the soup hot, garnished with fresh parsley and green onions for added freshness.
