  • 2 pounds Boneless lamb shoulder
  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 3 large, sliced Carrots
  • 2 chopped Celery stalks
  • 4 medium, diced Red potatoes
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 1 14-ounce can Crushed tomatoes
  • 2 Bay leaves
  • 1 teaspoon, chopped Fresh thyme
  • 1 teaspoon, chopped Fresh rosemary
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Frozen peas
  • 2 tablespoons Chopped parsley

Directions

Step 1

Trim any excess fat from the lamb shoulder and cut it into 1.5-inch cubes.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 3

Add the lamb cubes in batches, and brown them on all sides. Remove the browned lamb and set aside.

Step 4

In the same pot, add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute, until fragrant.

Stir in the sliced carrots and chopped celery, sautéing for about 3 minutes.

Add the tomato paste to the vegetables, stirring to coat them evenly.

Return the browned lamb to the pot and pour in the beef broth and crushed tomatoes.

Add the bay leaves, fresh thyme, fresh rosemary, salt, and black pepper. Stir well to combine.

After 1.5 hours, add the diced red potatoes to the stew and cook for an additional 20 minutes, or until the potatoes are tender.

Remove the bay leaves before serving.
