Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 cups beef broth, low sodium
  • 1 can (14.5 ounces) diced tomatoes, no added sugar
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large potatoes, diced
  • 1 cup green peas, frozen
  • 2 tablespoons parsley, chopped

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, working in batches if necessary to avoid overcrowding the pan. Remove the beef and set aside.

In the same skillet, add the onion, carrots, and celery. Sauté for about 5 minutes until they start to soften. Add the minced garlic and cook for an additional 1 minute until fragrant.
