  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned chickpeas, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 2 cups baby spinach
  • 0.5 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion, diced carrots, and diced celery to the pot. Cook for about 5-7 minutes until the vegetables are softened, stirring occasionally.
