Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or saucepan. Cook according to your rice cooker's instructions or bring to a boil, reduce heat to low, cover, and cook for 15 minutes.
While the rice is cooking, prepare the rice vinegar mixture. In a small bowl, mix the rice vinegar and salt until the salt dissolves.
Once the rice is cooked, transfer it to a large bowl. Gradually fold in the rice vinegar mixture using a wooden spatula or spoon. Be gentle to avoid smashing the grains.
Cool the rice to room temperature by spreading it out in the bowl and occasionally flipping it with the spatula.
While the rice is cooling, prepare the fillings. Slice the cucumber and carrot into thin matchsticks. Peel and slice the avocado.
Cut each nori sheet in half to make eight rectangles.
To assemble the temaki, place a half sheet of nori on a clean surface with the shiny side down. Place about 1/4 cup of sushi rice on the left side of the nori, spreading it out diagonally towards the center.
Arrange a few pieces of cucumber, carrot, avocado, and seafood diagonally on top of the rice.
Moisten the top right corner of the nori with a bit of water to help seal the roll.
Starting at the bottom left corner, roll the nori into a cone shape, making sure to wrap tightly so the ingredients don't fall out.
Repeat the process with the remaining nori sheets and fillings.
