Ingredients

  • 4 cups shaved ice
  • 1 cup light coconut milk
  • 1 cup unsweetened nata de coco
  • 2 medium ripe banana
  • 1 cup jackfruit, sliced
  • 1 cup purple yam (ube), cooked and mashed
  • 1 cup sugar-free gelatin, cubed
  • 0.5 cup sugar-free sweetened mung beans
  • 0.5 cup sugar-free sweetened white beans
  • 1 cup fresh fruit of choice (mango, strawberries, etc.)
  • 4 slices sugar-free leche flan
  • 0.25 cup toasted pinipig (optional)

Directions

Step 1

Prepare all your ingredients by slicing the ripe bananas, slicing the jackfruit, and cutting the gelatin into cubes. Make sure the purple yam (ube) is pre-cooked and mashed.

Step 2

In a tall glass or dessert bowl, add the following layers: first, scoop in 2 tablespoons of sugar-free sweetened mung beans followed by 2 tablespoons of sugar-free sweetened white beans.

Next, layer in 2 tablespoons of nata de coco, then add 2 to 3 tablespoons each of cubed sugar-free gelatin, mashed purple yam, and sliced jackfruit.
