Ingredients

  • 0.5 cup Whole wheat flour
  • 0.5 cup Powdered milk
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Cardamom powder
  • 2 tablespoons Ghee (clarified butter)
  • 0.5 cup Milk
  • 0.75 cup Artificial sweetener (such as erythritol or stevia)
  • 1.5 cups Water
  • 1 teaspoon Rose water
  • 2 cups Oil
  • 2 tablespoons Pistachios

Directions

Step 1

In a bowl, combine the whole wheat flour, powdered milk, baking powder, and cardamom powder.

Step 2

Add the ghee to the dry ingredients and mix until the mixture resembles breadcrumbs.

Step 3

Gradually add milk, a little at a time, to form a soft dough. Be careful not to over-knead.

Step 4

Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 5

In the meantime, prepare the syrup. In a saucepan, combine the artificial sweetener and water. Bring it to a boil until the sweetener is dissolved, then simmer for 5-7 minutes.

Step 6

Remove the syrup from heat and add rose water. Set aside to cool slightly.

Step 7

Divide the dough into small balls, approximately 1 inch in diameter, ensuring they are smooth to avoid cracks.

Step 8

Heat oil in a deep pan over medium heat. Test the oil's readiness by dropping a small piece of dough. It should sizzle and rise slowly.

Step 9

Carefully add the dough balls to the hot oil in batches. Fry them over medium-low heat until golden brown, turning them occasionally for even cooking.

Step 10

Once fried, remove them with a slotted spoon and drain on paper towels briefly.

Step 11

Immediately transfer the hot gulab jamuns into the warm syrup. Allow them to soak for at least 30 minutes to an hour.

Step 12

Garnish with chopped pistachios before serving. Enjoy your sugar-free Gulab Jamun warm or chilled.
