Ingredients

  • 14 oz extra-firm tofu

  • 2 cloves garlic, minced
  • 1 large bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 1 medium zucchini, sliced into 1-inch rounds
  • 0.25 cup natural peanut butter
  • 0.25 cup coconut milk, unsweetened
  • 1 tablespoon lime juice, freshly squeezed (for peanut sauce)
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon toasted sesame seeds
  • 2 tablespoons fresh cilantro, chopped
  • 8 pieces wooden skewers, soaked in water

Directions

Step 1

Press the tofu between paper towels to remove excess moisture, then cut into 1-inch cubes.

In a medium bowl, mix together 1/4 cup soy sauce, 2 tablespoons lime juice, 1 tablespoon sesame oil, 1 teaspoon sriracha, 1 teaspoon minced fresh ginger, and 2 cloves of minced garlic. This will be the marinade.
