Ingredients

  • 1 pound Small new potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh rosemary
  • 1 tablespoon Fresh thyme
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium-high heat, around 400°F (200°C).

Step 2

Carefully wash and dry the new potatoes. Cut any larger potatoes in half so that all the pieces are roughly the same size for even cooking.

Step 3

In a large bowl, combine olive oil, chopped fresh rosemary, chopped fresh thyme, garlic powder, salt, and black pepper.

Step 4

Add the potatoes to the bowl and toss until they are evenly coated with the herb mixture.

Step 5

Prepare a large piece of aluminum foil or a grill basket. If using foil, fold it in half to create a pouch to hold the potatoes.

Step 6

Place the coated potatoes in the foil pouch or grill basket. If using foil, seal the edges of the pouch tightly to keep in the steam.

Step 7

Carefully place the foil pouch or grill basket on the grill grates.

Step 8

Grill the potatoes for about 20-25 minutes, turning occasionally, until they are tender and have a nice golden brown color on their skins.

Step 9

Remove the potatoes from the grill and let them cool slightly before serving.

Step 10

Serve hot as a side dish for your favorite grilled meats or as a delicious stand-alone snack.
