Ingredients

  • 2 racks Baby back ribs
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Paprika
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground dried mustard
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 cup Sugar-free ketchup
  • 1 quarter cup Apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Liquid smoke
  • 1 tablespoon Stevia or monk fruit sweetener
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat your grill to medium heat, approximately 275°F (135°C).

Step 2

Remove the membrane from the back of the ribs by sliding a knife under it and pulling it off.

Step 3

In a small bowl, combine olive oil, salt, black pepper, paprika, garlic powder, onion powder, cumin, dried mustard, chili powder, and smoked paprika.

Step 4

Rub the spice mixture generously over both sides of the ribs.

Step 5

Wrap each rack of ribs in aluminum foil, ensuring they are completely sealed.

Step 6

Place the ribs on the grill, bone-side down. Close the lid and cook for 2-1/2 hours, maintaining a grill temperature of 275°F (135°C).

Step 7

While the ribs are cooking, prepare the sugar-free BBQ sauce by combining sugar-free ketchup, apple cider vinegar, Worcestershire sauce, liquid smoke, sweetener, and ground black pepper in a saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally.

Step 8

After 2-1/2 hours, carefully unwrap the ribs and increase the grill temperature to medium-high (around 350°F or 175°C).

Step 9

Brush the ribs with the prepared BBQ sauce on both sides and place them back on the grill.

Step 10

Grill the ribs for an additional 20-30 minutes, basting with BBQ sauce every 10 minutes, until they are caramelized and slightly charred.

Step 11

Remove the ribs from the grill and let them rest for about 10 minutes before slicing and serving.
