Ingredients

  • 2 medium Aubergines (Eggplants)
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh basil leaves
  • 0.25 cup Fresh mint leaves
  • 1 large Garlic clove
  • 2 tablespoons Lemon juice
  • 1 tablespoon Red wine vinegar
  • 2 tablespoons Water

Directions

Step 1

Preheat your grill to medium-high heat.

Slice the aubergines into 1/2-inch thick rounds. Brush both sides of each slice with olive oil and season with salt and black pepper.
